nameko and soba noodle soup

Nameko and Soba Noodle Soup

2 servings prepared soba noodles
2 servings miso or mentsuyu
4-6 oz Nameko mushrooms
Scallions, sliced, for garnish

Prepare miso broth per package instructions. Add soba noodles to broth and simmer.

In a separate pan, sauté the nameko mushrooms whole in a tbsp or so of almond or vegetable oil. Add mushrooms to broth and stir gently to allow flavors to combine. Serve immediately.
